Shepard’s Pie

with Cauliflower & Parsnip Purée

By Chef Justin
Founder, Purée and Simple

A lighter, lower-carb interpretation of a classic comfort food. Chef Justin swaps the traditional mashed-potato topping for Purée and Simple’s Cauliflower & Parsnip Purée, creating a creamy, nutrient-dense alternative without sacrificing the familiar look and character of shepherd’s pie.

WHY THE PARSNIP PURÉE?

For this recipe, the Cauliflower & Parsnip Purée is specifically selected because it most closely replicates the appearance and creamy texture of mashed potatoes.

This vegetable blend is also a low-glycemic swap for traditional mashed potatoes, giving you the same velvety comfort with a fraction of the heavy starches.

Cauliflower delivers powerful, gut-healthy prebiotics and cell-protecting antioxidants.

Parsnips bring a subtle, natural sweetness paired with essential minerals like folate and manganese to support everyday metabolism.

RECIPE AT A GLANCE

Serves: 4-6
Prep Time: 15 mins.
Cook Time: 30-40 minutes
Difficulty: Easy

INGREDIENTS

For the Filling

  • Ground beef: 1 lb.

  • Frozen mixed vegetables: 1 ½ cups

  • All-purpose flour: 1-2 tbsp.

  • Red wine: ¼ cup

  • Beef stock: ½ cup

For Serving

  • Purée and Simple Cauliflower & Parsnip Purée: enough to cover the filling

  • Fresh chives: for garnish

Optional Additions

Chef Justin notes that traditional mashed-potato toppings often contain butter and, in some recipes, cheese. These may be added according to preference, although the featured Purée and Simple preparation is designed as a clean, vegan alternative.

METHOD

  1. Brown the Beef

Heat a large skillet and brown the ground beef thoroughly, allowing it to develop a rich, deep color.

  2. Add the Vegetables

Add the frozen vegetables to the browned beef and mix until incorporated.

  3. Thicken

Sprinkle a small amount of flour over the beef and vegetables. Stir well to combine.

  4. Deglaze

Add a little red wine to the pan, using it to deglaze the bottom of the pan and incorporate the flavorful browned bits.

  5. Add the Stock & Reduce

Pour in approximately ½ cup of beef stock. Stir and allow the mixture to simmer, reducing until it thickens.

The finished filling should be thick enough to hold together beneath the purée rather than being loose or soupy.

  6. Assemble

Transfer the filling to a baking dish and spread evenly.

Spoon the Cauliflower & Parsnip Purée over the top, spreading it into an even layer.

  7. Bake

Place the assembled shepherd’s pie in the oven and bake until the purée develops a light golden color on top.

The original recording does not specify an oven temperature or exact baking time.

  8. Garnish & Serve

Remove from the oven and finish with fresh chives.

    Serve warm.

CHEF'S NOTE

“Super easy, super quick, super delicious, super nutritious.”

Traditional shepherd’s pie is commonly finished with mashed potatoes, which can contain generous amounts of butter and, in some preparations, cheese. Chef Justin's approach uses Purée and Simple's vegan Cauliflower & Parsnip Purée to create a creamy, lower-carb alternative.

The result maintains the familiar visual appeal of mashed potatoes while introducing a nutrient-dense vegetable-based topping.
